Happy Tuesday Everyone!
I'm super excited to share with you today a Guest Post from one of my other girlfriends I had the pleasure of meeting online. I follow her blog, and am continually inspired by the things she does (see a post I created here, because of her) and shares with her Readers. I contacted her about guest posting, and she was so sweet to offer us this {Sweet} recipe...a treat indeed. I'm trying not to drool all over my laptop.
Take it away..
Hey everyone! I'm Erin from How to Nest for Less!
Hilani was nice enough to let me guest post today with one of my favorite Fall desserts: Pumpkin Gooey Butter Cake. I'm a St. Louis girl and it's one of the sweet treats that we're known for. Never had it before? It's a MUST HAVE for the Fall season. Come see...
TThrough the years I've tried many gooey butter cakes, but this revised Paula Deen pumpkin version is by far the best!
INGREDIENTS for Pumpkin Gooey Butter Cake:
Cake:
1 18 1/4-ounce package yellow cake mix
1 egg
8 tablespoons margarine or butter, melted
Filling:
1 15-ounce can of pumpkin
1 8-ounce package cream cheese, softened
3 eggs
2 teaspoons vanilla
8 tablespoons margarine or butter, melted
1 16-ounce box powdered sugar
1 tablespoon cinnamon sugar
2 teaspoons nutmeg
1 egg
8 tablespoons margarine or butter, melted
Filling:
1 15-ounce can of pumpkin
1 8-ounce package cream cheese, softened
3 eggs
2 teaspoons vanilla
8 tablespoons margarine or butter, melted
1 16-ounce box powdered sugar
1 tablespoon cinnamon sugar
2 teaspoons nutmeg

DIRECTIONS: Preheat oven to 350 degrees. To make the cake, combine all of the ingredients and mix well. And don't worry, the mixture will still be a little crumbly after it's combined.

Pat the mixture into a lightly greased 13x9-inch baking pan or two round pans. I used a spoon to flatten it out.

Prepare filling: In a large bowl, beat the cream cheese and pumpkin until smooth. Add the eggs, vanilla, and butter and beat together. Next, add the powdered sugar, cinnamon, nutmeg, and mix well.

Spread pumpkin mixture over cake batter and bake for 40 to 50 minutes.

Make sure not to over bake as the center should be a little gooey. Serve with fresh whipped cream.
Thank you so much to Hilani and her readers for letting me share a Fall treat with you today. Hope you enjoy!
